The shape of this orecchietta is beautiful and resembles that of handmade orecchiette, small, thin, wrinkled and hollow (it is a secret of pasta makers how difficult it is to make such an exclusive and refined orecchietta).

At Casa Prencipe they have worked for a long time on the perfect recipe to obtain what can be called a real "gourmet orecchietta".
Their unique taste comes from the use of 100 percent Apulian durum wheat, certified pure water and mountain air.
